Product review
This 10.5-inch Yanagiba is shaped specifically for long, uninterrupted pull cuts. The single-bevel profile and elongated blade length let you slice sashimi, sushi, fish fillets and other boneless proteins into thin, uniform pieces with minimal tearing when used with a smooth draw-cut technique.
The blade is forged from Japanese SKD11 alloy and finished with a layered Damascus pattern for an attractive surface treatment. SKD11 is chosen for its toughness and edge retention, yielding a sharp cutting lip suited to delicate slicing tasks while delivering consistent performance over repeated use.
Handle construction combines ebony with sapele mahogany accents and copper spacers in an octagonal form. That shape promotes a secure hold and steady control during long slicing motions, helping to reduce wrist fatigue when preparing multiple servings. The balance is tuned to pair the heft of the steel with an ergonomic grip.
A fitted walnut saya is included to shield the blade in storage; its interior is lined with felt to minimize edge contact and marring. The knife ships in a wooden presentation box with internal cushioning, making it suitable as a collector’s piece or a gift for a sushi enthusiast or serious home cook.
Intended use is focused: perform controlled, single-stroke draws for the cleanest cuts. Maintenance requires proper honing and occasional professional sharpening to preserve the single-bevel geometry and SKD11 edge characteristics.

VerdictThis 10.5-inch Yanagiba is engineered for precise sashimi and sushi work: a single-bevel SKD11 blade offers strong edge life and the Damascus surface gives it a polished look. Mixed results — needs upkeep
Not impressed overall. If you can’t sharpen single-bevel blades yourself the edge can be a hassle; durability and retained sharpness weren’t what I expected between uses.

Well designed for its weight and steel thickness; the heft gives a solid, rugged impression even if it reads smaller than expected.
