I’m a big fan of Greek salads and lately I’ve been eating them everywhere — in restaurants and at home. Making this chickpea-based version at home lets you control the balance of toppings and greens, and ensures plenty of the best parts: tomatoes, peppers, and crunchy veggies. It’s a flexible salad that works equally well over a bed of lettuce or on its own for a light, protein-rich lunch.

On the first day I enjoyed the salad over mixed greens; the next day I had it alone with a side of fruit. The prep is straightforward: chopping the vegetables takes the most time, but with some music on it’s enjoyable and the whole recipe comes together in about 20 minutes.

Using half a bell pepper and half a red onion often leaves extra halves. I try not to waste produce, so I sautéed the leftovers for omelets the next morning. If you prefer, double the recipe to avoid leftover vegetables. This salad is ideal for vegetarian lunches, casual gatherings, or a quick dinner. You can easily customize it by adding olives, roasted vegetables, different herbs, or a variation on the dressing.

Ingredients

  • 1 15 oz. can chickpeas, drained and rinsed
  • 1 large tomato, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 red or yellow or orange bell pepper, chopped
  • 1 small cucumber, chopped
  • 1/2 red onion, finely chopped
  • optional: 1/3 cup chopped black olives
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano or 1 tbsp fresh oregano
  • 1 teaspoon dried parsley or 1 tbsp fresh parsley
  • salt and plenty of black pepper, to taste
  • 1/2 cup crumbled feta cheese

Instructions

  • In a large bowl, combine the drained chickpeas with chopped bell peppers, red onion, tomato, cucumber, optional olives, and minced garlic. Drizzle with olive oil and lemon juice, then add oregano, parsley, salt, and plenty of black pepper. Toss to combine so the flavors meld.
  • If serving right away, gently fold in the crumbled feta just before serving. If preparing ahead, refrigerate the salad for up to 4 hours and add the feta just before serving to keep it from getting too soft.
