Sweet Onion Marmalade

I love getting my friends together to chat—about kids, fashion, life, or whatever comes up. Often at these get-togethers at least one guest follows a gluten-free diet. I don’t, but I like to make everyone feel welcome, so I always offer at least a few gluten-free options. For years I’d serve a cheese platter without crackers until I discovered that Breton offers a line of gluten-free crackers. They’re a convenient and tasty addition to any spread.

I’ve long been a fan of Breton, so their gluten-free varieties were an easy pick for my summer gatherings. The line includes several flavors:

Herb & Garlic – bold garlic notes make these crisp crackers tasty on their own or topped with a light spread.

The Original (gluten-free with flax) – made with arrowroot and green lentil flour; they taste like traditional crackers.

Black Bean with Onion & Garlic and White Bean with Salt & Pepper – bean-based crackers with fiber and protein, low in saturated fat and free from artificial colors and trans fats.

This Sweet Onion Marmalade pairs especially well with Breton’s White Bean with Salt & Pepper crackers. I like to add a little blue cheese and walnuts for an elevated bite, but the marmalade is delicious on its own and is naturally gluten-free.

Caramelizing the onions takes some time, but most of it is hands-off. The result is soft, deeply sweet onions that nearly melt in your mouth. A splash of orange juice and a bit of zest add a bright counterpoint that lifts the flavor. Make the marmalade ahead and store it airtight so you’ll be ready for spontaneous get-togethers—or a quiet snack with a glass of wine. It also makes a lovely addition to brunch, especially when served with Breton crackers, blue cheese, and walnuts.

Top your savory bites with this sweet onion marmalade!

Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 large vidalia onions, sliced thin
  • 1/3 cup water
  • 1 tablespoon sugar
  • 2 tablespoons orange juice
  • 1/2 teaspoon orange zest
  • 1 teaspoon balsamic vinegar
  • kosher salt and pepper to taste

Instructions

  • Heat the olive oil and butter in a medium skillet until the butter melts. Add the sliced onions, cover, and cook until they begin to soften and caramelize, stirring occasionally. Add half the water, cover, and cook until the water evaporates. Then add the remaining water, sugar, orange juice, orange zest, and balsamic vinegar. Cover and continue cooking, stirring occasionally, until the onions turn a deep brown. This will take about 30–40 minutes in total. Season with kosher salt and pepper to taste.
  • Let the marmalade cool to room temperature, then store in an airtight container. Refrigerate and use within a reasonable time.
