Brownie Fruit Pizza

This recipe is simple to assemble and consistently a crowd-pleaser. While you can make brownies from scratch, a high-quality boxed mix delivers reliably fudgy results and speeds up preparation—perfect when you need dessert for a gathering.

I grew up enjoying this dessert for patriotic holidays, and its classic flavor combination—dense chocolate brownie, creamy cheesecake-style topping, and fresh berries—remains one of my favorites.

Ingredients for Brownie Pizza

  • Brownie mix – Use a thick fudgy mix for best results (about a 20 ounce box).
  • 1 egg
  • 1/3 cup vegetable oil (or canola)
  • 1/4 cup water

For the Cream Cheese Layer

  • 1 (8 ounce) package cream cheese, softened
  • 1 cup heavy whipping cream (or 8 oz Cool Whip as a substitute—see notes)
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup finely chopped strawberries

For the Toppings

  • 1 cup raspberries
  • 1 cup sliced strawberries
  • 1/2 cup blueberries
  • White or dark chocolate, chopped or grated (optional)

How to Make Brownie Pizza

  1. Preheat the oven to 375°F (190°C).
  2. Line a 13–14 inch pizza stone or pizza pan with parchment paper. Tracing the stone and cutting the parchment helps it fit neatly.
  3. In a large bowl, whisk together the egg, oil, and water. Stir in the brownie mix until just combined.
  4. Drop the batter into the center of the parchment-lined stone or pan. Spread into an approximately 11-inch circle, leaving about 1 inch from the edge. Bake 18–20 minutes, or until set. Remove and let the brownie cool completely.
  5. Using an electric mixer, beat the softened cream cheese with the sugar and vanilla until smooth. Add the heavy whipping cream and beat until stiff peaks form. Scrape the bowl as needed and gently fold in the chopped strawberries.
  6. Spread the cream cheese mixture evenly over the cooled brownie base.
  7. Arrange sliced strawberries, raspberries, and blueberries on top. For a glossy finish, brush the berries lightly with a little seedless jam. Sprinkle chopped or grated chocolate over the berries if desired.
  8. Chill until ready to serve. Cut into wedges or squares and serve cold or at room temperature.

Tips and Variations

  • If you don’t have a round pizza stone or pan, a large cookie sheet works fine. The shape may be less perfect, but the flavor is the same.
  • If using a different boxed brownie mix, follow the egg, oil, and water proportions on that box and choose a mix of similar weight (around 20 ounces) so the batter stays thick enough for a round shape.
  • To simplify, substitute the heavy whipping cream with an 8 ounce container of Cool Whip; if you do this, reduce the granulated sugar in the cream cheese layer to 1 tablespoon.
