This recipe for a single serving came together after a sweaty hot yoga class when I rushed home starving. I grabbed rice noodles, scanned the fridge for veggies, and put this simple meal together in no time.

Description
Quick, flavorful stir fry noodles made for one — ready in about ten minutes with a creamy sunflower seed butter sauce.
Ingredients
- 6oz rice noodles
- 1 tsp avocado oil (or other cooking oil)
- 1 scallion, finely chopped
- 1/2 cup broccoli, chopped
- 1/2 cup water (to use as needed)
- 1 tbsp sesame seeds
sauce
- 1 tbsp sunflower seed butter (Sunbutter)
- 1 tbsp soy sauce
- 1 tsp sriracha
- 1 tsp hoisin sauce
- 2 tbsp water
Instructions
- Make the sauce: whisk together the sunflower seed butter, soy sauce, sriracha, hoisin, and 2 tablespoons of water until smooth. Set aside.
- Cook the rice noodles: boil in a pot of water for 1 minute, then remove from heat and drain.
- Heat 1 tsp avocado oil in a pan over medium-high heat. Add the chopped scallion and broccoli and stir-fry for 2 minutes. Add 1–2 tablespoons of water if needed to steam the broccoli for another 2 minutes.
- Add the drained noodles to the pan along with the sauce. Reduce heat to medium-low and toss to coat, adding small splashes of water if needed to soften the noodles and loosen the sauce.
- Remove from heat and serve topped with sesame seeds.
