Temperatures are soaring—already approaching 105°F—and summer hasn’t even peaked. When the heat gets intense, I either head to the lake or retreat indoors where the air conditioning is working overtime. On those sweltering days, a cold, hydrating beverage is essential. Enter the Watermelon Mint Spritzer: a light, family-friendly mocktail that’s quick to make and perfect for cooling down.

We always keep a tub of watermelon in the fridge during summer—kids love it and so do we—so I decided to turn that juicy fruit into a simple, flavorful drink. This spritzer combines freshly blended watermelon with a touch of honey, a splash of apple cider vinegar, fresh mint, and bubbly club soda for a lightly fizzy finish. It’s refreshing, subtle, and easy to adapt to taste.

For this recipe I used Pompeian Organic Apple Cider Vinegar with the mother. Apple cider vinegar can be strong on its own, so blending it with watermelon juice and honey softens the flavor while still adding a bright, tangy note. Beyond flavor, many people use apple cider vinegar as part of their wellness routine; a small amount here gives the spritzer a pleasant complexity without overpowering the fruit.
If you enjoy the tangier side of this drink, feel free to increase the apple cider vinegar slightly. Garnish each glass with fresh mint leaves and a small chunk of watermelon to elevate the presentation.

Watermelon Mint Spritzer

Ingredients
- 12 ounces chopped watermelon or 1 cup watermelon juice
- 1 tablespoon plus 1 teaspoon honey
- 1 1/2 teaspoons Pompeian Apple Cider Vinegar with the mother
- club soda
- mint leaves
- ice
Instructions
Place the chopped watermelon in a blender or food processor and pulse until it reaches a smooth, watery consistency (about 30 seconds). Strain the puree through a cheesecloth or fine mesh strainer to extract the juice.
Pour the juice into a container with a spout. Whisk in the honey and apple cider vinegar until combined. Add two mint leaves to the mixture and refrigerate for at least 15 minutes to chill and let the flavors meld.
To serve, fill glasses with ice, pour watermelon juice to halfway, then top with club soda. Garnish with a small watermelon chunk and a mint leaf on a toothpick for a fresh, inviting finish.
