
Agua fresca, which literally means “fresh water,” is a beloved Mexican drink often sold from food trucks and street stands. It’s refreshing, simple, and perfect for warm days. Made with ripe fruit and water, this watermelon agua fresca is one of the easiest and most satisfying versions to prepare at home. Some people strain the mixture for a smoother texture, but the slight slushiness from blended watermelon is part of its charm. If possible, choose seedless watermelon to avoid having to fish out tiny seeds. A squeeze of fresh lime brightens the flavor and balances the sweetness.
I first tried this adaptation from Cooking Light. It’s the kind of drink I grab at food trucks in San Francisco on sunny afternoons. It also makes a great homemade treat when you want something light and cooling without fuss.
On a personal note, I’m enjoying a rare day off after working through the weekend. - 2 cups cubed watermelon (seedless if possible)
- 1 cup water
- 1 tablespoon sugar (adjust to taste)
- 1 tablespoon fresh lime juice
- Combine the watermelon, water, sugar, and lime juice in a blender.
- Blend until smooth. For a silkier drink, strain through a fine mesh sieve; otherwise serve as is for a refreshing, slushy texture.
- Chill briefly or serve immediately over ice with a lime wedge.
