I’ve been using my crock pot to make flavorful side dishes, and this Pesto Rice & Beans has become a favorite. It pairs beautifully with simple grilled or marinated chicken breasts and is an easy, satisfying accompaniment that comes together with minimal effort.
Pesto Rice & Beans

Ingredients
- 1 can 15 oz Great Northern beans, rinsed and drained
- 1 can 14 oz vegetable or chicken broth
- 3/4 cups uncooked long grain rice
- 1 1/2 cup frozen cut green beans, thawed and drained
- 1/2 cup prepared pesto
- Grated Parmesan cheese optional
Instructions

Combine the rinsed beans, broth, and uncooked rice in the crock pot. Cover and cook on low for 2 hours.

Stir in the thawed, drained green beans. Recover and cook on low for another hour, or until the rice and beans are tender.

Turn off the slow cooker. Stir in the prepared pesto and grated Parmesan, if using. Let the dish sit covered for 5 minutes, until the cheese melts and flavors meld. Serve hot.
