When I first tried the two-ingredient pancake method I wasn’t very impressed — I had high expectations because the word “pancakes” set the bar. After tweaking the basic mix by adding PB2 powdered peanut butter and a touch of vanilla, I enjoyed the results much more. The PB2 also boosts the protein, which helps keep you full longer.
One of the best things about this recipe is how low it is in Freestyle points. Four pancakes equal just 1 Freestyle point, making it a great option for a filling, budget-friendly breakfast.

This recipe is quick and simple — one of my favorites for busy mornings. I even made them one weekday morning before work when I ran out of ingredients for my usual breakfast sandwich.
For best flavor and easier mashing, use a ripe banana. The PB2 powdered peanut butter blends seamlessly into the batter and cuts a lot of the fat compared to traditional peanut butter, without sacrificing taste.
These PB2 pancakes cook like regular pancakes: small bubbles will form on the surface when it’s time to flip. I topped mine with a couple tablespoons of sugar-free syrup, which didn’t add any points, and they were delicious with a side of fresh fruit.

PB2 Pancakes – Weight Watchers Freestyle

Ingredients
- 1 ripe banana
- 1 egg
- 2 tablespoons PB2 powdered peanut butter
- 1 tablespoon water
- 1/2 teaspoon vanilla extract
Instructions

Peel the banana and mash it in a small bowl until smooth.

Add the egg and stir until fully combined with the banana.

In a separate small bowl, mix the PB2 and water until smooth.

Stir the PB2 mixture and vanilla into the banana-and-egg mixture until evenly combined.

Heat a small nonstick frying pan over medium heat and lightly spray with cooking spray. Pour about 1/4 cup of batter for each pancake. Flip when small bubbles appear on the surface and cook until both sides are golden.

Top with your preferred toppings, keeping in mind to calculate any additional points. I like sugar-free syrup or fresh fruit.
