One-Pot Cauliflower Fried Rice Recipe for Quick Weeknights

Quick and easy cauliflower fried rice ready in under 30 minutes, cooked in one pan on the stovetop. This recipe is a healthy, vegetable-packed weeknight meal with classic Chinese-inspired flavors.

Cauliflower Fried Rice Recipe

The first time I tried cauliflower fried rice it turned out mushy because I overcooked it. Since then I’ve perfected the method so the cauliflower remains tender with a pleasant bite. This low-carb version is great when you’re cutting carbs or following diets like Whole30 or keto. It won’t replace regular rice for rice lovers, but it’s an excellent, flavorful alternative that helps satisfy cravings. You can customize it just like other vegetable-based pasta swaps.

  • Breakfast version – Add eggs and crisp bacon or sausage for a hearty morning plate.

How to make cauliflower fried rice?

  1. Prepare the cauliflower – Cut a head of cauliflower into large florets and pulse in a food processor until it resembles rice, or use store-bought frozen cauliflower rice.
  2. Heat the oil – Warm sesame (and olive) oil in a nonstick pan over medium-high heat.
  3. Sauté aromatics – Add minced garlic and chopped onion; cook until fragrant and lightly golden.
  4. Add vegetables and cauliflower – Stir in frozen mixed vegetables and the riced cauliflower; cook about 4 minutes until tender but not mushy.
  5. Season – Stir in soy sauce, sriracha (if using), salt and pepper; mix to combine.

  • Nonstick pan – Prevents sticking and helps achieve even cooking.
  • Adjust spices – Tailor soy sauce and sriracha to your taste.
  • Eggs optional – Omit for a vegan version or include for more protein.
  • Food processor – Makes quick work of ricing a cauliflower head.
  • One-pan method – Scramble eggs on one side of the pan and cook the rice on the other to keep it simple.
