Ingredients

  • 1 cup dried wild blueberries (about 6 ounces)
  • 3/4 cup quick oats
  • 1/2 cup sweetened flaked coconut
  • 1/2 cup white chocolate chips, coarsely chopped
  • 1/3 cup blanched, unsalted, slivered almonds
  • 1/4 cup ground flaxseed meal
  • 3/4 cup salted almond butter
  • 3 tablespoons honey
  • 1/2 teaspoon almond extract

Instructions

  1. In a medium bowl, combine the dried blueberries, oats, coconut, chopped white chocolate, slivered almonds, and flaxseed meal. Stir until evenly mixed.
  2. Add the almond butter and honey, stirring to partially combine.
  3. Drizzle the almond extract over the mixture and mix until everything is thoroughly combined and holds together when pressed.
  4. Press the mixture firmly into an ungreased 8″ x 8″ baking pan. Cut into squares immediately before refrigerating so the cuts are clean.
  5. Serve right away or cover and refrigerate until ready to serve. Store in the fridge for several days or freeze for longer storage.

Notes

Wild blueberries: Dried wild blueberries are smaller and work well here because they distribute evenly without creating large gaps that can make bars crumbly. If you only find regular dried blueberries, chop any large pieces before mixing.

Almond butter: Different brands vary in flavor and texture. We preferred a slightly saltier, smoother almond butter for the best texture and taste. If your almond butter is unsalted, add about 1/8 teaspoon sea salt to the dry ingredients. Very thick almond butter (including homemade) may require slightly less flaxseed or oats to avoid a dry, crumbly result. Read labels and avoid brands with hydrogenated oils or excessive added sugars.

Make-ahead tips: These bars keep for several days in the refrigerator and freeze well when tightly wrapped, making them ideal for make-ahead snacks or desserts.
