Missing your favorite southern-style dessert? These gluten-free pecan bars recreate that classic flavor with an easy press-in shortbread crust and a perfectly thickened, slightly salty maple-pecan filling. This recipe avoids overly sweet or runny results and produces bars that slice cleanly every time.

Gluten-Free Pecan Bar Recipe That Works Every Time!
These bars started from a simple gluten-free shortbread base adapted from a lemon bar crust. The method is straightforward: mix, press, and bake. Using a metal baking pan gives the crust extra crispness, which I recommend for best texture.
The filling balances pecans, pure maple syrup, dark brown sugar, and a touch of molasses for depth without cloying sweetness. I include a small amount of cornstarch to ensure the filling sets reliably. That little thickener makes the difference between slices that hold together and a gooey mess.
I tested this recipe a lot and landed on a ratio that gives a satisfying nut-to-filling balance while keeping the bars easy to slice and serve. Toasting the pecans before adding them enhances their flavor and gives the finished bars a richer, more toasty profile.
Let’s Make This Together!
(Step-by-step photos and adapted instructions are shown below. For exact ingredient amounts and full recipe details, see the recipe card at the end.)
Easy gluten-free shortbread crust
Combine gluten-free all-purpose flour, sugar, and salt, then work in softened butter one tablespoon at a time until the mixture comes together into soft clumps. The dough looks sandy at first but will bind as the butter is incorporated. For a firmer, crisper base, add an egg yolk after the butter is mixed in.

Press (no rolling!), bake, and a special tip
Line an 8×8-inch pan with parchment paper for an easy lift-out. Press the dough evenly into the pan—no rolling required. Bake at 350°F for 20–23 minutes, until the edges are lightly golden. While the crust bakes, spread pecans on a small tray and toast them in the oven for 10 minutes for deeper flavor.

Whisk together the filling
In the same bowl used for the crust, whisk the brown sugar with cornstarch and salt to distribute the thickener evenly. Add eggs, pure maple syrup, melted butter, molasses, and vanilla, and whisk until smooth.

Assemble and bake again
Spread the toasted pecans over the par-baked crust, pour the filling on top, and return to the oven for 20–25 minutes. The edges should be set while the center still has a slight wobble—this ensures a gooey interior that firms as it cools. Cool completely before slicing for clean bars.

Storing and Make-Ahead Tips – No Soggy Bars!
These bars often taste better the next day. Let them cool to room temperature and store uncovered on the counter overnight. Covering them immediately can soften the bottom layer, so wait until they’re fully cooled before wrapping.
After serving, leftovers can be covered with foil and refrigerated or loosely covered and kept at room temperature for up to 3 days.

You can also make these as mixed nut bars. If you’re short on pecans, substitute a combination of chopped cashews, slivered almonds, and pecans—any mix that totals 2 cups works beautifully.
Increase The Yumminess!
These variations take the bars in delicious directions:
- Chocolate chips – Add a layer of semi-sweet chips over the nuts before pouring the filling for a chocolate-pecan twist.
- Flaky sea salt – A light sprinkle before or after baking enhances the sweet-and-salty contrast.
- Other nuts – Swap or mix nuts as desired; just use 2 cups total.
- Bourbon – Replace the molasses with a splash of bourbon for a warm, southern note.

- 1 ⅓ cup (192 g) gluten free all purpose flour, I use and recommend Cup4Cup
- ⅓ cup (67 g) granulated sugar
- ¼ teaspoon salt
- 8 tablespoons (113 g) unsalted butter, softened and cut into pieces
Pecan Filling
- 2 cups (250 g) salted pecan halves
- ½ cup (117 g) packed dark brown sugar
- 1 tablespoon cornstarch
- ½ teaspoon salt
- 2 large eggs, room temp
- ¼ cup (80 g) pure maple syrup
- 3 tablespoons (42 g) unsalted butter, melted and cooled
- 1 tablespoon molasses
- 1 teaspoon vanilla
- (optional) flaky sea salt
Equipment
- 8×8-inch metal baking pan
- Mixing bowl
- Small baking tray for toasting nuts
Instructions
-
Preheat the oven to 350°F. Grease an 8×8-inch metal pan and line it with parchment, leaving an overhang to lift out the bars. Set aside.

In a large bowl, combine flour, sugar, and salt. Add softened butter one tablespoon at a time, mixing after each addition, until the dough clumps into soft balls.
-
Press the dough evenly into the prepared pan and bake on the middle rack for 20–23 minutes, until the edges are lightly browned. While it bakes, spread pecans on a tray and toast in the oven for about 10 minutes. Remove and set aside.

For the filling, whisk together brown sugar, cornstarch, and salt. Add eggs, maple syrup, melted butter, molasses, and vanilla, and whisk until smooth.
-
Spread toasted pecans over the baked crust, pour the filling on top, and bake for 20–25 minutes, until edges are set and the center still has a slight wobble. Cool completely (about 2 hours) before slicing. Sprinkle flaky salt if desired.
