To crisp the skin after pressure cooking, place the breast on a baking pan and broil on high (around 440°F) for a few minutes, rotating the pan if needed and watching closely so the skin doesn’t burn.
How to make turkey gravy in the Instant Pot

Measure 2 cups of the strained liquid and return it to the Instant Pot insert. Ingredients
- 7 lb bone-in, skin-on turkey breast
- 3 Tablespoons olive oil
- 3/4 teaspoon paprika
- 2 teaspoons chopped poultry herb mix (rosemary, sage, thyme)

- 2 celery stalks
Instructions
- Add the chicken broth to the Instant Pot insert, place the trivet inside, and arrange the onion slices, garlic and celery in the bottom of the pot.
- Whisk together the olive oil, paprika, herb mix, salt and pepper in a small bowl.
- Rinse the turkey breast and remove any packaging or gravy pocket, then pat it dry. Brush the turkey all over with the oil-herb mixture and set it on the trivet, breast side up.
- Place the lid on the Instant Pot, set the valve to sealing, select Manual/High Pressure and set the timer to 35 minutes (adjust time for different weights).
- When the cook cycle finishes, press Cancel and allow the pressure to release naturally. This keeps the turkey moist.
