How to Smoke and Build a Classic Rib Sandwich

If you’ve read any of my other posts, you know I rarely leave a recipe alone. A fast-food McRib is fine, but a homemade Smoked McRib Sandwich—made from tender smoked baby back ribs—blows it away.

I’m a huge fan of baby back ribs and usually eat them straight off the bone. There are many ways to cook them, but I most often use a variation of the 3-2-1 method. It’s simple and reliable: low-and-slow smoke, a foil braise, then a final sauced finish for perfect tenderness and bark.

What is the 321 Method for Ribs?

The 3-2-1 method is popular because it’s straightforward and forgiving. The numbers refer to hours spent in each stage of the cook:

  • 3 hours — meat side up on the smoker at 180–225°F to develop smoke and bark
  • 2 hours — tightly wrapped in foil with butter, brown sugar, and apple juice at 225°F to braise and tenderize
  • 1 hour — unwrapped, meat side up, brushed with barbecue sauce and finished at around 275°F

I follow that framework most of the time but will tweak it: sometimes a longer initial smoke to deepen bark, or a longer foil braise to get bones to pull cleanly. The important thing is to aim for ribs tender enough to slide the bones out while still holding some texture.

Meat Side Up, or Bone Side Up?

When wrapping, keep the rack bone-side down (meat side up) inside the foil. The juices created in the foil will steam the meat; placing the meat side down risks it sitting in those juices and becoming too soft. We want tender ribs, but not a mushy texture—aim for bones that slide out cleanly without the meat falling apart.

For this sandwich I used a 3–3–1 approach: a longer braise to ensure the bones pull cleanly for easy removal before assembling the sandwich.

  • BBQ rub
  • Olive oil
  • Butter
  • Apple juice
  • Brown sugar
  • BBQ sauce (your favorite)
  • Sourdough bread (or other sandwich loaf)
  • Pickled onions

Smoked McRib Sandwich Recipe

Start by trimming and squaring the rack: remove excess fat and the silver skin. Rub the ribs with a light coating of olive oil (or mustard) and generously apply your BBQ rub to both sides.

Set your smoker to about 180°F and use oak, cherry, or apple pellets for pork. Place the ribs meat side up and smoke for roughly 3 hours to build smoke flavor and bark.

Wrapping Baby Back Ribs

After the initial smoke, remove the ribs and double-wrap them in heavy-duty foil. Place cubed butter on top of the rack, sprinkle 1/4 cup brown sugar, add a little more rub, and pour 1/4 cup apple juice into the foil (let it run down the side, not directly on the meat, to preserve the bark). Seal the foil with the seam on top and return the ribs to the smoker at 225°F.

Braise in foil for 2½–3 hours. This extended braise helps the meat become tender enough to pull the bones while retaining structure.

When ready, carefully open the foil over a tray to catch steam and juices. Return the ribs to the smoker meat side up, brush with your favorite barbecue sauce, raise the heat to about 275°F, and cook an additional 30–60 minutes to set the sauce and finish the bark.

Pulling Bones for Smoked McRib Sandwiches

Remove the ribs from the smoker and let them rest on a cutting board for about 10 minutes. While they rest, slice a loaf of sourdough lengthwise. Flip the rack meat side down and gently pull each bone free—the bones should slide out cleanly. Once the bones are removed, place the boneless rack on the bread, top generously with pickled onions and extra barbecue sauce, add the top slice, and slice into portions to serve.

Ingredients

  • 1 rack pork baby back ribs
  • 3 tbsp bbq rub
  • 1 tbsp olive oil
  • Pickled onions
  • 1 loaf sourdough bread, sliced in half longways
  • 2 tbsp barbecue sauce
  • 8 tbsp butter
  • 1/4 cup apple juice
  • 1/4 cup brown sugar

Instructions

  • Square up the ribs and remove the silver skin. Rub both sides with olive oil and apply 2 tbsp of rub.
  • Place the ribs in your smoker meat side up and cook at 180°F for three hours.
  • Remove ribs and double-wrap in foil. Add butter, apple juice, brown sugar, and the remainder of the rub before sealing.
  • Return the wrapped ribs to the smoker at 225°F for 2½–3 hours.
  • Carefully remove the ribs from foil and place back on the smoker. Brush with barbecue sauce and increase heat to 275°F for about 30 minutes.
  • Remove ribs and let rest for 10 minutes.
  • After resting, remove each bone, place the boneless rack on the bread, top with pickled onions and more barbecue sauce, slice, and serve.
