The key to juicy pork is not overcooking it. Current guidelines recommend cooking pork chops and tenderloin to an internal temperature of 145°F, then letting the meat rest for five minutes. Using a reliable instant-read thermometer helps ensure perfect doneness: a slight blush of pink at 145°F is safe and keeps the meat tender.

If you like a finishing touch, quickly sear or grill sous vide-cooked chops for a minute or two per side to add color and texture. Great side dishes include grilled corn salad, pesto orzo salad, or roasted Parmesan asparagus.

Ingredients

  • 4 bone-in pork chops

Instructions

  1. Place pork chops in a gallon-sized zip-top bag.

To cook via sous vide

  1. Heat the sous vide water to 145°F. Add the sealed bag of pork chops and cook for 1 hour. For extra color, finish the chops on a hot grill or skillet for a minute or two per side, or serve directly.

To grill

  1. Preheat the grill to medium-high. Grill chops until the internal temperature reaches 145°F. Let rest 5 minutes before serving.

To bake

  1. Preheat the oven to 400°F. Arrange pork chops in a baking dish and bake 18–20 minutes, or until the internal temperature reaches 145°F. Let rest 5 minutes before serving.

Notes

To make freezer meals: marinate the chops, remove excess air from the bag, label, and freeze flat. Thaw before cooking.
