They combine creamy peanut butter and honey with oats, vanilla protein powder, and crunchy Chex for a satisfying texture and a boost of protein and energy.
The recipe below is a simple adaptation of a popular homemade peanut butter protein bar. The main variation here is the use of Peanut Butter Chex cereal for extra peanut flavor and crunch. Any Chex variety will work, but Peanut Butter Chex enhances the overall peanut taste.

Adding cereal creates a delightful crunch that contrasts with the soft, chewy base of oats and peanut butter. These homemade protein bars are not chalky like some pre-packaged protein bars; they stay soft with just the right chew. If you prefer a moister bar, you can increase the honey by up to 1/4 cup. Ingredients
- 1 cup natural creamy peanut butter
- 1/2 cup honey (no less; you may use up to 1/4 cup more for a softer texture)
- 1 cup quick 1-minute oats (not instant)
- 1 cup vanilla protein powder
- 1 cup Chex cereal (Peanut Butter Chex recommended for extra flavor)
Instructions
- Line a 9×9-inch or 7×11-inch pan with parchment or wax paper.
- In a medium microwave-safe bowl, heat the peanut butter and honey on high for 30 seconds. Stir, then heat another 30 seconds and stir again until smooth and combined.
- Mix in the oats and vanilla protein powder until evenly incorporated. Fold in the Chex cereal gently to preserve some crunch.
- Press the mixture evenly into the prepared pan. Refrigerate for 1 hour to set.
- Remove from the fridge and slice into 12 bars (or cut to your preferred size). Store covered at room temperature up to one week, or freeze individually wrapped up to three months.
