Vegan Butternut Squash Stew Recipe

Ingredients
2 tablespoons extra virgin olive oil
1 medium red onion, diced
2 carrots, diced
1 red bell pepper, diced
4 garlic cloves, minced
2 cups vegetable broth
1 tablespoon ground cumin
1 teaspoon turmeric
2 tablespoons thyme (fresh or dried)
1 (15-oz) can chickpeas, rinsed and drained
1 (15-oz) can crushed tomatoes
2 cups butternut squash, peeled and cubed
1/4 cup lime juice
2 cups kale, stems removed and leaves chopped
Salt and pepper, to taste

Instructions
1) Heat the olive oil in a large skillet over medium heat. Add the diced onion, carrots, red bell pepper and garlic. Sauté for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
2) Stir in the vegetable broth, cumin, turmeric, thyme, salt and pepper. Cook for a couple of minutes to let the spices bloom.
3) Add the drained chickpeas, crushed tomatoes and cubed butternut squash. Reduce heat to a simmer and cook about 15 minutes, or until the squash is fork-tender.
4) Stir in the chopped kale and cook 1–2 minutes more, until the kale has wilted but remains bright green.
5) Remove from heat and stir in the lime juice just before serving. Taste and adjust seasoning with more salt and pepper if needed.
