Ingredients

For the skewers:

  • 2 large boneless chicken breasts, diced
  • 1/2 cup green bell pepper, chopped into large pieces
  • 1/2 cup red onion, chopped into large pieces
  • 3/4 cup pineapple, chopped into large chunks

For the marinade:

  • 1/4 cup pineapple chunks
  • 2 tablespoons coconut aminos
  • 2 teaspoons honey
  • 1 teaspoon sesame oil
  • Juice of one lemon
  • 1 clove garlic
  • 2 teaspoons apple cider vinegar
  • 1/4 cup water, more as needed

Instructions

  1. Combine all marinade ingredients in a blender and blend until smooth. If necessary, add a little more water to reach a brushable consistency.
  2. Thread the skewers by alternating pineapple, bell pepper, red onion, and chicken pieces. Leave a small gap between pieces so heat circulates evenly.
  3. Brush or pour the marinade over the assembled skewers. Let them sit for at least 10 minutes; longer marinating (30–60 minutes) will deepen the flavor.
  4. Preheat the grill to medium-low and spray the grates lightly with cooking spray or brush with oil to prevent sticking. Grill the skewers, turning occasionally, until the chicken is cooked through and the vegetables are tender, about 12–15 minutes depending on heat and skewer thickness.
