Early mornings rarely allow the relaxed, enjoyable breakfast experience I crave: the slow ritual of brewing coffee, cooking with care and savoring the meal. One weekend the child surprised me by waking up at 6 a.m., beaming and full of energy. Ingredients
- 4 Filet mignons (or your preferred steak)
- 1 cup red wine
- 4 sprigs rosemary
- 1 cup instant polenta
- 3 cups milk
- 2 tbsp whipped cream cheese
- ¼ cup freshly grated Parmesan
- 4 eggs
- 2 tbsp white vinegar
- Salt and freshly ground black pepper
- 1 tbsp coconut oil (or other high-heat oil)
Instructions
- Steaks
- Place steaks, red wine and rosemary in a resealable bag and marinate for at least 2 hours or up to overnight. For deeper flavor, freeze in the marinade and thaw before cooking.
- Remove steaks from the marinade and pat dry with paper towels. Season liberally with salt and freshly ground pepper.
- Heat a cast iron or heavy-bottomed skillet over high heat. Add coconut oil and let it heat until shimmering.
- Sear steaks 3–5 minutes per side for medium-rare (adjust time for desired doneness). Remove from heat and tent loosely with foil to rest.
Creamy Polenta
- Bring 3 cups of milk to a boil in a medium saucepan. Gradually whisk in the polenta and cook, whisking, until smooth and creamy, about 5 minutes. Add more milk if needed for desired consistency.
- Remove from heat and stir in whipped cream cheese and Parmesan. Season to taste and set aside.
Poached Eggs
- Fill a medium pot with water and add the white vinegar. Bring to a gentle simmer, with small bubbles on the bottom of the pot.
- Crack each egg into a small ramekin or cup.
- Create a gentle whirlpool in the water by stirring with a spoon, then slip an egg into the center. Poach 3–4 minutes, until whites are set but yolks remain runny.
- Remove eggs with a slotted spoon and drain briefly on a paper towel. Season with salt and freshly ground pepper.
Plating
- Spoon creamy polenta onto plates or into individual skillets.
- Top with a rested steak and place a poached egg on the steak.
- Garnish with fresh rosemary, a crack of black pepper and flaky salt. Serve immediately.
