- 2 bananas

How to Make Banana Pops with Vegan Ganache
- Open the chilled can of coconut milk and scoop out the thick coconut cream that has risen to the top. Try to leave most of the watery part behind — you can save that for a smoothie or another use.
- Place the coconut cream in a small saucepan and heat it over medium until it begins to simmer gently.
- Remove from heat and add the dairy-free chocolate chips to the warm coconut cream.
- Stir until the chocolate melts and the ganache is smooth and glossy.
- Turn off the heat. Slice the bananas into even pieces and insert a cake pop stick into each slice.
- Dip the tops of the banana slices into the ganache, using just enough to coat the top.
- Immediately add sprinkles if using — they stick best while the ganache is warm.
- Place the banana pops on a sheet of parchment to set. You can let them dry briefly, or enjoy them right away.
- Serve on a plate and watch them disappear — they’re that good.
