Ingredients (serves 2 sandwiches)

  • 6 medium slices of bread
  • 8 slices of bacon, cooked to preference (optional)
  • 1–1.5 cups (100–150 g) cheddar, grated
  • 1–1.5 cups (100–150 g) mozzarella, shredded
  • Butter, as needed for spreading

Instructions

  1. Lay out the 6 slices of bread and spread one side of each slice with butter.
  2. Place two slices butter-side-down in a cold non-stick pan. Add a layer of cheddar, mozzarella, and two slices of bacon onto each slice, then top each with another slice of bread butter-side-up.
  3. Turn the heat to medium and cook until the bottom slice is golden and the cheese begins to melt. Flip each sandwich carefully.
  4. On the toasted side, add more cheddar, mozzarella, and bacon. Place the final slice of bread on top, butter-side-up.
  5. Cook until the bottom slice is golden, then flip one last time and fry until the exterior is evenly golden and the cheese is fully melted and gooey.
  6. Remove from the pan, let rest for a minute, slice in half, and serve immediately.
