Crispy Sweet Potato Toasts with Savory Toppings

Some food trends simply aren’t for me — unicorn everything and tiny star-shaped fruit in parfaits come to mind — but there are a few trends I happily embrace. One of my favorites is sweet potato toast. Not sweet potato on toast, but slices of sweet potato toasted and used like bread. It sounds unusual, but it works: sweet potatoes are flavorful, nutrient-dense, and a great alternative to processed bread for mornings when you want something simple and satisfying.

To make sweet potato toast, slice a scrubbed sweet potato lengthwise into roughly 1/4-inch slices (I leave the skin on). Toast the slices in a regular toaster or toaster oven until they’re just tender — about two cycles or around ten minutes depending on your appliance. The texture is different from bread: not airy or crunchy, but tender and pleasantly neutral in flavor, which makes them a versatile base for both savory and sweet toppings. If you keep portions moderate, you can pick them up and eat them much like conventional toast.

I always have sweet potatoes on hand, so this has become a go-to breakfast for me. It’s quick, portable, and easily customizable. Here are three of my favorite topping combinations:

  • Avocado with Everything But the Bagel seasoning and a handful of microgreens
  • Nut butter topped with banana slices, a drizzle of honey and a sprinkle of bee pollen
  • Kite Hill almond milk cream cheese finished with thinly sliced radishes and chopped chives

You don’t need to follow a specific diet like paleo, grain-free, or Whole30 to enjoy these — anyone can appreciate how tasty and filling they are. Try different toppings such as hummus, a fried egg, or sautéed apples (not all at once!) to find combinations you love. Sweet potato toasts are a flexible, nutritious alternative to traditional bread that make breakfasts, snacks, or light lunches feel a little more interesting.

Ingredients

  • 1 sweet potato, scrubbed clean and cut lengthwise into ¼-inch slices — leave the skin on

Instructions

  • Toast the sweet potato slices in a toaster or toaster oven for two cycles, or about 10 minutes, until they are just tender. Top with your favorite toppings and serve immediately.

Notes

I typically prepare two slices with toppings for my breakfast, but adjust portions to suit your appetite.
