Creamy Homemade Italian Dressing Recipe — Smooth, Tangy & Versatile

This homemade creamy Italian dressing is my family’s go-to for salads. It’s dairy-free and mayo-free, made with apple cider vinegar for bright flavor.

A great dressing makes a salad enjoyable, and this one transforms even simple greens into something special.

I rotate my diet for allergy reasons, but if I didn’t, I’d happily use this dressing every day. The blend of apple cider vinegar, Italian seasoning, and Dijon mustard works with almost any salad combination.

My kids love it too — even my picky son asked for a salad because of this dressing.

Ingredients needed

Apple cider vinegar — adds tang and depth. I prefer it to red wine vinegar or lemon for its flavor and health appeal.

Olive oil — provides richness and body. Choose a good-quality olive oil you enjoy tasting.

Dijon mustard — gives flavor and helps emulsify the dressing so it thickens and stays combined.

Shallot — adds a mild, sweet onion note that lifts the dressing; red onion can substitute but the flavor will differ slightly.

Garlic — essential for savory depth; I always include it.

Italian seasoning — brings classic herbal flavor. If you prefer a different profile, use fresh or dried oregano and basil instead.

How to make the best creamy Italian dressing

Measure liquids in a small glass pitcher for easy pouring. I find this method most convenient.

Combine the apple cider vinegar with water, then add the olive oil. Pour these liquids into a blender or high-speed mini blender.

Add the Dijon mustard, Italian seasoning, salt, shallot, and garlic to the blender. Pulse for about 10–12 seconds until the dressing is smooth, creamy, and pale yellow. A Nutribullet or Vitamix works well, but any blender will do.

Recipe notes

Blend briefly — about 10–12 seconds — to emulsify the dressing without overheating or “breaking” it. If the dressing loses creaminess after a few days, re-blend to restore texture.

This dressing is tangy. If you prefer a sweeter profile, stir in about 1 teaspoon of honey to balance the acidity.

  • ¼ cup apple cider vinegar
  • ½ cup water
  • ¾ cup olive oil
  • 1 Tablespoon Dijon mustard
  • 1 (heaping) teaspoon Italian seasoning
  • ½ teaspoon sea salt
  • 1 teaspoon shallot
  • 2 garlic cloves

Instructions

  • Blend all ingredients for about 10–12 seconds until smooth and creamy.

Notes
