Bacon Cheddar Soup

This Bacon Cheddar Soup is a rich, creamy, and hearty bowl of comfort. Loaded with smoky bacon and sharp cheddar, it’s thick and satisfying—ideal for chilly days or whenever you crave a warming, flavorful soup.

Prep time: 45 minutes

Serves 4–6

Ingredients:

1 pound thick-cut bacon

½ cup butter

1 cup chopped sweet onions

1 cup chopped celery

1 cup chopped carrots

½ cup all-purpose flour

6 cups whole milk

1 cup heavy cream

1 cup chicken stock

2 cups grated cheddar cheese

1 teaspoon freshly grated nutmeg

¼ cup chopped Italian flat-leaf parsley

2 tablespoons freshly cracked black pepper

Salt, to taste

Directions:

Slice the bacon into thin strips and cook in a large soup pot over medium-high heat until golden brown and crispy. Remove the bacon with a slotted spoon and drain on paper towels, leaving the rendered bacon fat in the pot.

Add the butter to the pot and melt. Add the chopped onions, celery, and carrots and cook, stirring occasionally, until the vegetables are softened and beginning to caramelize, about 5 minutes.

Sprinkle in the flour and cook, stirring constantly, for 3–4 minutes to remove the raw flour taste and form a roux with the fat and butter.

Gradually whisk in the milk, then add the heavy cream and chicken stock. Continue to cook, stirring frequently, until the mixture thickens, about 5–6 minutes.

Stir in the grated cheddar and cook for 1–2 minutes until melted and incorporated. Use an immersion blender to puree the soup until smooth and velvety. If you don’t have an immersion blender, carefully transfer the hot soup in batches to a standard blender—secure the lid and blend cautiously.

Return the soup to the pot (if needed) and stir in the chopped bacon, grated nutmeg, chopped parsley, freshly cracked black pepper, and salt. Taste and adjust seasoning as desired.

To serve, garnish with extra chopped bacon, additional shredded cheddar, seasoned croutons, chopped chives, and a sprinkle of parsley for color and contrast.
