Ingredients

  • 1/2 cup (113 gr) unsalted butter, room temperature
  • 1/2 cup (100 gr) brown sugar
  • 1/4 cup (50 gr) granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 3/4 cups (210 gr) oat flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup (130 gr) chocolate chips
  • Sea salt flakes, optional

Instructions

  • Using a hand mixer or stand mixer fitted with the paddle attachment, cream the butter with the brown and granulated sugars on high speed until pale and fluffy.
  • Scrape down the bowl. Add the egg and vanilla, then beat until combined.
  • Add the oat flour, baking soda, and salt. Mix on low speed just until incorporated—do not overmix.
  • Fold in most of the chocolate chips with a spatula, reserving a few to press on top before baking.
  • Chill the dough for at least 30 minutes or up to 3 days in the fridge. This step helps control spread and improves texture.
  • Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.
  • Using a 1.6 inch (about 4 cm) scoop or a tablespoon, drop rounded portions of dough onto the prepared sheets, spacing them about 2 inches apart.
  • Press a few reserved chocolate chips into the top of each cookie for an attractive finish.
  • Bake for 9–11 minutes, until the edges are set and the centers still look slightly soft.
  • Right after removing the cookies from the oven, sprinkle with sea salt flakes if using.
  • Let the cookies rest on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
