How to make Clam Curry

Step 1: Heat 2 teaspoons oil in a pan over medium heat. Add chopped onion and sauté until soft and translucent. Add garlic and ginger and cook until the onions are lightly golden.

Step 2: Add grated coconut and roast until golden and aromatic. Remove from heat and allow to cool thoroughly.

Step 3: Grind the roasted coconut mixture with tamarind and a little water into a smooth paste.

Step 4: In the same pan, heat 2 teaspoons oil and sauté another onion until golden.

Step 5: Add chopped tomatoes and cook until soft and pulpy.

Step 6: Add the cleaned clams, garam masala, red chili powder, turmeric, salt and a slit green chili. Add a little water, mix gently and cover.

Step 7: Cook the clams for about 5 minutes, until the meat becomes firm and opaque.

Step 8: Stir in the ground coconut–tamarind paste and mix well.

Step 9: Add water to reach the desired consistency—tonak is typically medium-thick. Cover and simmer for 2 more minutes to let flavors meld.
