Ingredients

  • 1 package Copra coconut meat
  • corn tortillas, cooked on a skillet
  • 2 limes, juiced
  • ½ tsp chili powder
  • ½ tsp cumin
  • ½ head shredded red cabbage
  • 1 pineapple, sliced (half for tacos, half for margaritas)
  • 1 jalapeño, diced
  • fresh cilantro, chopped
  • 2 avocados, sliced

  • 2 oz tequila
  • 5 oz coconut water
  • 2 cups fresh pineapple
  • 3 cups ice

Instructions

  1. Heat a skillet until very hot. Warm corn tortillas briefly on each side until char marks appear. Transfer tortillas to a lightly damp towel and fold to steam so they stay soft and pliable.
  2. Combine half of the diced pineapple, the diced jalapeño and chopped cilantro in a bowl to make the pineapple-jalapeño salsa. Adjust heat and lime to taste.
  3. In a shallow bowl, whisk together the juice of 2 limes, chili powder and cumin.
  4. Dip each piece of coconut meat into the chili-lime mixture, coating both sides. Arrange the seasoned coconut in the warm tortillas.
  5. Top each taco with pineapple salsa, sliced avocado and shredded red cabbage. Garnish with extra cilantro and a squeeze of lime.
  6. For the margarita, add tequila, coconut water, fresh pineapple and ice to a blender. Blend until smooth and serve in chilled glasses.
