Since I became a stay-at-home mom and started blogging about food, lunches at our house have taken on a new life. Most days Archie and I make do with leftovers or a quick plate of bacon and eggs, but our favorite by far is quesadillas. We both love them for their simplicity and versatility. Recently we’ve been obsessed with a new variation: hummus quesadillas with feta and vegetables. They’re fast, satisfying, and unexpectedly wholesome.

These hummus quesadillas with feta and vegetables make a perfect quick lunch, light dinner, or snack. They combine creamy hummus, tangy feta, and crisp vegetables for a filling bite that tastes like comfort food without being heavy.

For the hummus, I often use my own easy homemade recipe because Archie loves to help make it. He climbs up on his little stool, drops the garlic into the food processor, and sprinkles in the cumin like a tiny sous-chef. If you don’t have a willing helper, store-bought or flavored hummus will do just fine and saves time.

TIPS & TRICKS:

  • Meal prep: While you assemble these quesadillas, slice extra carrots and zucchini and prepare a little extra hummus. Store them in the fridge for an easy, ready-to-go snack during the week.
  • Flavor variations: Try different hummus flavors—roasted red pepper, garlic, or lemon-herb varieties work especially well. You can also add a sprinkle of fresh herbs like parsley or cilantro for brightness.

Ingredients

  • 4 flour tortillas
  • 1 cup hummus (homemade or store-bought)
  • 2 medium carrots, cut into thin matchsticks
  • 1/2 medium zucchini, cut into thin matchsticks
  • Feta cheese, crumbled, for sprinkling

Instructions

  1. Heat a nonstick skillet over medium heat.
  2. Spread about 1/4 cup hummus evenly over one tortilla.
  3. Sprinkle feta crumbles on top of the hummus to taste.
  4. Arrange a small handful of carrot matchsticks and a small handful of zucchini matchsticks on one half of the tortilla.
  5. Carefully place the loaded tortilla into the hot skillet and cover with a lid.
  6. Cook for about 3 minutes or until the bottom begins to brown; check with a spatula for even coloring.
  7. When the tortilla is browned to your liking, fold the side without vegetables over the veggies, pressing gently with the spatula to seal.
  8. Slide the quesadilla onto a plate, let it rest for about one minute, then cut and serve.
  9. Repeat with the remaining tortillas and fillings.
