I wanted to use this blogging break to thank you all for reading and for your thoughtful comments. Your feedback makes this journey so much richer. I would still cook and write without you, but sharing these kitchen stories with an audience makes it feel like a conversation instead of talking to myself. I’m not sure whether I’ll be able to post while I’m away, but I wanted to leave you with one last summer-ready recipe to enjoy. Even if summer hasn’t arrived yet in the Northern Hemisphere, this dish will bring bright, fresh flavors to your table. Promise I’ll try to bring back more ideas when I return — soon we’ll have amazing seasonal vegetables and fruit again.

There are foods that deliver pure pleasure simply by their texture and flavor. Avocado is one of those for me: creamy, buttery, and melting on the tongue. I really love avocados. If you don’t believe me, know that I often have avocado slices on bread with tomato and cheese for breakfast. I’m not very sweet-toothed in the morning — give me savory: tomatoes, avocado, cucumber, olives, and strong cheese. Smoked salmon fits in there too. Breakfasts in Northern Europe were heavenly: smoked herring, eggs, pickles, tomatoes — bliss first thing in the day.

Since I started blogging I’ve been collecting recipes and tips, bookmarking the ones I love. I came across a crab-and-avocado idea that inspired the layered crab and avocado stacks I now make for guests. People always ask, “How did you make that stack?” The secret is a simple ring mold. Sometimes I let the mystery remain so it seems a little more impressive.

On the plate in the photo you’ll also notice little red bits in the background — those are pickled beets. I’ll share that pickling method in a future post.

Crab, Avocado and Lime

Crab, Avocado and Lime Sauce

(serves 4)

Ingredients:

  • 4 ripe avocados
  • 250 g fresh crab meat
  • 2 limes
  • 4 tbsp avocado oil (or a neutral oil)
  • Salt and freshly ground black pepper
  • 1/4 tsp cayenne pepper (adjust to taste)
  • Fresh chives, finely chopped

Instructions:

  • Grate the zest of one lime, then squeeze the juice of both limes into a small bowl.
  • In a bowl, toss the fresh crab meat with 2 tablespoons of oil, a pinch of salt and black pepper. Reserve about 2 tablespoons of crab meat with larger pieces for garnish.
  • Peel and pit the avocados. From four avocados, cut seven halves into small cubes and reserve the final half to slice for garnish.
  • Whisk together the lime zest, lime juice, cayenne, the remaining 2 tablespoons of oil, and a little salt and pepper. Gently fold this dressing into the cubed avocado so the pieces are evenly coated but still hold their shape.
  • Place a ring mold on a small serving plate. Start with a layer of dressed avocado in the bottom of the mold, press lightly, then add a layer of crab, then another layer of avocado. Remove the mold carefully.
  • Top with the reserved crab pieces and thin slices from the last avocado half. Finish with chopped chives and an optional lime wedge for presentation.

Serve immediately as an appetizer, or chill briefly before serving. If stored too long the avocado will release some juice, so prepare no more than a short time ahead.

This version is light, fresh, and ideal for summer entertaining. The combination of creamy avocado, bright lime, and sweet crab is a classic that impresses without much fuss. I often serve it as a starter for dinner with friends — elegant, quick, and always well received.
