Ingredients

  • 6 tablespoons butter-flavored shortening (or preferred non-dairy baking stick)
  • 1/2 cup brown sugar + 3 tablespoons
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon xanthan gum (omit if your gluten-free flour blend already includes it)
  • 1/4 teaspoon salt
  • 1 Ener-G egg (or equivalent commercial egg replacer)
  • 1/2 teaspoon vanilla
  • 1/2 cup + 6 tablespoons gluten-free flour (use your preferred blend)

Instructions

  1. Preheat the oven to 350°F (175°C).

  4. Add the baking soda, xanthan gum (if using), salt, egg replacer or Ener-G egg, and vanilla; mix until combined.
  5. Crush the gluten-free graham crackers and stir them into the batter.
  6. Add the gluten-free flour and mix until incorporated and the dough comes together.
  7. Gently fold in the mallow bits and dairy-free chocolate chips by hand.
  8. Scoop the dough into even portions and place them on the prepared baking sheet, leaving space for spreading.
  9. Bake for 10–12 minutes, until the edges are golden and crisp while the centers remain slightly soft.
  10. Remove the pan from the oven and let the cookies rest on the warm sheet for five minutes to set.
  11. Transfer cookies to a wire rack to finish cooling completely.
  12. Store leftovers in an airtight container at room temperature for several days.
