Ingredients
- 800 g new potatoes, cut any big ones in half
- 1 tsp olive oil
- 1 onion, finely chopped
- 3 tsp chopped garlic
- 800 g tinned, chopped tomatoes
- 350 ml GF vegetable stock
- 2 tsp dried oregano
- 1/2 tsp chilli flakes
- 1/8 tsp dried allspice
- 100 g pitted Kalamata olives
- Salt and Pepper
To serve:
- 100 g feta
- Handful fresh chopped parsley
- Gluten free flatbreads (optional)
Instructions

Add the potatoes, olive oil, onion and garlic to a large pan (or use a hob-safe slow cooker insert) and fry for about 5 minutes over medium-high heat until the potatoes start to brown at the edges.

If you used a pan, transfer the mixture to the slow cooker. Add the chopped tomatoes, stock, oregano, chilli flakes, allspice, olives, salt and pepper. Stir to combine.

Cover and cook on high for 3–4 hours or on low for 5–6 hours, until the potatoes are tender and the sauce has melded.

Remove the lid, stir gently, then serve in bowls topped with crumbled feta and chopped parsley.
