The shrimp are typically seasoned, lightly breaded, and fried or air-fried until golden and crunchy, then immediately coated in a sauce that balances heat, sweetness, and tang. This recipe delivers an appetizer or main-course option that’s easy to prepare, visually appealing, and full of bold flavor—perfect for gatherings, weeknight dinners, or when you want to impress guests with minimal fuss.

Step-by-Step Guide to Peeling and Deveining Shrimp

  1. Prepare the shrimp: Rinse shrimp under cold water to remove any surface ice or debris, then pat dry with paper towels. Dry shrimp hold coatings better and fry more evenly.
  2. Peel the shrimp: Hold the shrimp firmly and pull off the shell starting from the legs and working toward the tail. Remove the shell completely unless you prefer to keep the tail on for presentation.
  3. Remove the legs and tails: If you leave the tail on for presentation, make sure it’s clean; otherwise remove it by gently pulling it away from the body.
  4. Devein the shrimp: Make a shallow cut along the back with a small paring knife or a deveining tool to expose the dark vein. Lift it out with the tip of the knife and discard. Rinse briefly if needed and pat dry.
  5. Final rinse and dry: After cleaning, rinse shrimp quickly under cold water to remove any remaining pieces, then thoroughly pat dry before seasoning or breading.

Decoding Shrimp Sizes: A Guide to Choosing the Perfect Shrimp for Your Recipes

Shrimp are labeled by count per pound—a lower count means larger shrimp. For example, U10 (under 10 per pound) describes very large shrimp, while counts like 16–20 indicate medium-large shrimp. Choose larger shrimp (lower count per pound) when you want a more substantial, meaty bite for presentation or to serve as individual portions. Smaller shrimp work well in pastas, salads, or dishes where shrimp are mixed with other ingredients. For this recipe we used U6–8 shrimp, which are large and make a dramatic appetizer; for everyday cooking U16–21 offers a good balance of size and value.

Firecracker Shrimp
The best appetizer for a gathering—crispy, saucy shrimp that impresses at any occasion.

Ingredients

  • 1½ lb shrimp (we used U6/8)

Seasoning flour:

  • ½ cup flour
  • ¼ cup corn meal
  • 1 tbsp garlic powder
  • ½ tbsp salt
  • 1 tbsp paprika

Panko:

  • 1 cup panko bread crumbs

Egg wash:

  • 2 eggs
  • 2 tbsp seasoning flour (from above)
  • ¼ cup buttermilk

Mayo dipping sauce / firecracker sauce:

  • 1 cup mayo
  • 3 tbsp sriracha
  • 2 tbsp sweet Thai chili sauce
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 2 tbsp Korean chilli flakes
  • ½ lemon, juiced
  • Pinch salt and pepper

Instructions

  1. Peel, devein, and butterfly the shrimp if desired, then pat dry.
  2. Mix the seasoning flour: combine flour, corn meal, garlic powder, salt, and paprika. Reserve 2 tbsp of the mixture for the egg wash.
  3. Make the egg wash by whisking together 2 eggs, 2 tbsp of the reserved seasoning flour, and the buttermilk.
  4. Set up a three-station breading line: seasoning flour, egg wash, and panko breadcrumbs.
  5. Coat each shrimp in the seasoning flour, dip into the egg wash, then press into panko until fully covered with no bare spots.
  6. Fry at 350°F for about 3 minutes, or air-fry at 400°F for approximately 10 minutes depending on shrimp size, until golden and cooked through.
  7. Remove shrimp from oil or air fryer and drain on paper towels to remove excess oil.
  8. While still warm, mix the firecracker sauce ingredients and toss the hot shrimp in the sauce so they are evenly coated.
  9. Garnish with sliced green onions and serve immediately.

Notes

Shrimp size: This recipe used U6–8 shrimp (6–8 per pound) for a large, impressive presentation. If you prefer a more economical option, U16–21 or similar medium-large sizes work well and may cook more quickly.

Texture tips: Thoroughly pat shrimp dry before breading and make sure the oil or air fryer is hot enough so the coating crisps immediately. This helps prevent sogginess when the sauce is added.

Make-ahead: You can prepare the sauce ahead and refrigerate. For best results, toss shrimp in the sauce just before serving so the crust stays crisp.
