This chocolate chia pudding is vegan-friendly, low in sugar, and rich in fiber — a satisfying breakfast or snack that helps steady blood sugar without sacrificing flavor.
Compared with conventional chocolate puddings, chia-based versions typically contain fewer calories, less saturated fat, and more fiber. They rely on whole-food ingredients rather than processed thickeners, and they let you control sweetness and add-ins.

Tasty Pudding Tips
- Choose a high-quality unsweetened cocoa for the best chocolate flavor. A richer cocoa makes a more satisfying pudding with less added sweetener.
- Use any unsweetened milk you prefer. Almond or macadamia milk lend a light, nutty flavor; coconut milk makes the pudding richer; or use dairy milk if you prefer.
- A little chia pudding goes a long way. Because of its fiber content and gel texture, a small serving is filling. Consider starting with about 1/4 cup and adding fresh fruit or nuts as toppings. Standard nutrition information is typically based on a 1/2 cup serving.
- Top chocolate chia pudding with berries (fresh or frozen), sliced banana, chopped nuts, a dollop of whipped cream, toasted coconut flakes, or chopped cherries for contrast and texture.
- Chia pudding pairs wonderfully with a spoonful of homemade jam or marmalade. A swirl of jam adds brightness and a touch of sweetness without overpowering the chocolate.
- 1 cup unsweetened almond milk (or any unsweetened milk)
- ¼ cup chia seeds
- 3 tablespoons unsweetened cocoa powder
- 1/8 teaspoon salt
- 1 tablespoon honey (or maple syrup for a vegan option)
- 1½ teaspoons espresso powder (optional, for a richer chocolate note)
- Combine all ingredients in a bowl, jar, or blender. Whisk or shake thoroughly to break up clumps of cocoa and distribute the chia seeds evenly. If using a blender, pulse briefly just until mixed.
- Cover and refrigerate for at least four hours or overnight so the chia can absorb the liquid and thicken. Stir or whisk briefly before serving to smooth the texture.
