  • Olive oil for the baking sheet and coating the slices.
  • Salt and pepper to season.
  • Malt vinegar: adds classic tang. (Contains gluten — omit if you need a gluten-free option or let guests add their own at the table.)
  • Parsley (optional, for garnish)

How to Make These Oven-Baked Potato Chips

  1. Wash the potatoes and leave the skin on. Slice them about 1/4 inch thick. Tip: Don’t slice them too thin or they can burn and lose flavor.
  2. Soak the slices in cold water for 5–10 minutes, then pat them thoroughly dry.
  3. Preheat the oven to 425°F (220°C).
  4. Coat a baking sheet with 1 tablespoon of olive oil.
  5. Place the baking sheet in the oven for about 5 minutes to get it hot.
  6. Toss the potato slices with the remaining olive oil, salt, and pepper to coat evenly.
  7. Carefully arrange the slices in a single layer on the hot baking sheet.
  8. Bake for 25 minutes or until the edges begin to brown. Flip the slices and bake another 10–12 minutes, watching closely so they don’t burn — oven times vary.
  9. When done, garnish with chopped parsley and lightly sprinkle malt vinegar over the chips. Serve the vinegar on the side so guests can add more if they wish.
  10. Serve immediately while hot and crisp.
