Quick, flavorful stir fry noodles made for one — ready in about ten minutes with a creamy sunflower seed butter sauce.


Ingredients

  • 6oz rice noodles
  • 1 tsp avocado oil (or other cooking oil)
  • 1 scallion, finely chopped
  • 1/2 cup broccoli, chopped
  • 1/2 cup water (to use as needed)
  • 1 tbsp sesame seeds

sauce

  • 1 tbsp sunflower seed butter (Sunbutter)
  • 1 tbsp soy sauce
  • 1 tsp sriracha
  • 1 tsp hoisin sauce
  • 2 tbsp water


Instructions

  1. Make the sauce: whisk together the sunflower seed butter, soy sauce, sriracha, hoisin, and 2 tablespoons of water until smooth. Set aside.
  2. Cook the rice noodles: boil in a pot of water for 1 minute, then remove from heat and drain.
  3. Heat 1 tsp avocado oil in a pan over medium-high heat. Add the chopped scallion and broccoli and stir-fry for 2 minutes. Add 1–2 tablespoons of water if needed to steam the broccoli for another 2 minutes.
  4. Add the drained noodles to the pan along with the sauce. Reduce heat to medium-low and toss to coat, adding small splashes of water if needed to soften the noodles and loosen the sauce.
  5. Remove from heat and serve topped with sesame seeds.
