Your favorite cheesy quesadilla is elevated with taco-seasoned ground beef, creamy refried beans, zesty salsa, and crunchy tortilla chips. These Taco Quesadillas are simple, delicious, and ready in about 20 minutes—perfect for a weekly rotation.

Ground Beef Quesadillas

Quesadillas are a family favorite, but plain tortillas and cheese can feel bland. I like to pack mine with protein and flavor for an easy, satisfying meal. These taco quesadillas combine seasoned ground beef, refried beans, salsa, and tortilla chips for a crunch-wrap–style texture that’s far tastier and healthier than fast-food options.

If you’ve tried making homemade crunch wraps, you know they can be time-consuming and tricky to fold. These quesadillas are a simpler alternative that delivers similar flavors and a lot less fuss. They’re also a fun, easy task to involve kids in—letting them spread beans or sprinkle cheese helps them feel part of dinner prep.

Taco Quesadilla Ingredients

Simple pantry and fridge items are all you need:

  • Burrito-sized tortillas
  • Canned refried beans
  • Ground beef
  • Taco seasoning
  • Mexican blend cheese
  • Salsa
  • Tortilla chips
  • Butter

How to Make Quesadillas on the Stove

While some people use the oven, a panini press, or novelty quesadilla makers, the best method is a hot skillet on the stove with a little butter. The goal is a golden, crisp tortilla exterior and fully melted cheese inside. Heat and cooking time will depend on your stovetop and pan, so adjust as needed to get that perfect balance of crunch and melt.

20-Minute Meals

With kids and a busy schedule, fast meals that use few ingredients and minimal prep are lifesavers. These taco quesadillas are one of many quick dishes I rely on. If you want other fast dinner ideas, try these favorites:

Taco Quesadillas

By: Julia Pacheco

Taco quesadillas are a crispy, cheesy mashup of two favorites—seasoned taco meat, melty cheese, and your favorite fixings tucked into a golden tortilla. Ready in about 20 minutes and great for weeknight dinners.

Prep: 5 mins • Cook: 15 mins • Total: 20 mins • Servings: 4

Ingredients

  • 1 large burrito-size tortilla per quesadilla
  • 14 oz canned refried beans
  • 1/2 lb ground beef
  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 1 1/2–2 cups Mexican blend cheese
  • 1/4 cup salsa (more if desired)
  • Tortilla chips, for crunch
  • Butter, for cooking

Instructions

  1. In a large skillet, cook the ground beef, breaking it into small pieces. When cooked through, drain excess grease. Sprinkle in the taco seasoning and add 1/4 cup water. Stir and simmer for 2–3 minutes until the seasoning is well distributed and the mixture thickens slightly.
  2. Lay a burrito-size tortilla flat. Spread a layer of refried beans over the bottom, dot with salsa, and add a portion of the seasoned beef. Top with a handful of tortilla chips and a generous sprinkle of cheese. Place a second tortilla on top. Repeat to assemble the remaining quesadillas.
  3. Heat a clean skillet over medium heat and add about 1 tablespoon butter. Once melted, cook each quesadilla for 2–3 minutes per side, or until the tortilla is golden brown and the cheese is melted. Slice and serve warm.
