Ingredients
- Cooking spray, I like olive oil spray
- 4 chicken breasts, (4 ounces each) boneless, skinless
- ½ cup orange juice
- ¼ cup fresh lemon juice
- 1 tablespoon brown sugar
- 1 tablespoon reduced-sodium soy sauce (for gluten-free, use Tamari sauce)
- 1 tablespoon garlic cloves, minced
- 1 teaspoon olive oil
- ½ teaspoon smoked paprika or paprika
- ¼ teaspoon red pepper flakes
- 1 teaspoon olive oil
Instructions

Arrange the chicken breasts in a single layer in a shallow baking pan or bowl. In a separate small bowl, whisk together the orange juice, lemon juice, brown sugar, soy sauce, minced garlic, 1 teaspoon olive oil, paprika and red pepper flakes. Pour the marinade over the chicken and turn the pieces to coat. Refrigerate for at least 2 hours, turning once; you can marinate overnight for deeper flavor.

Coat a large nonstick skillet with cooking spray and heat 1 teaspoon olive oil over medium heat. Remove the chicken from the marinade and add the pieces to the pan. Keep the leftover marinade—you’ll use it later. Cover and cook the chicken about 5 minutes per side, until cooked through.

While the chicken cooks, pour the reserved marinade into a small saucepan. Bring it to a simmer and cook for about 10 minutes so it is fully cooked and slightly thickened.

When the chicken is done, remove it from the pan and drizzle the reduced marinade over the pieces. This sauce adds bright citrus flavor and a touch of sweetness. You can also grill or bake the chicken if you prefer—adjust cooking times accordingly.
