Ingredients
– 2 pounds (about 1 kg) chicken, whole or in parts
– 5 garlic cloves
– 1/2 inch fresh ginger
– 2 stems of herbs (1 celery stalk and a handful of parsley)
– 1 medium onion
– 1/2 teaspoon white pepper
– 2 seasoning cubes (Maggi or similar)
– 1/2 teaspoon salt (adjust to taste)
– Vegetable oil for frying
Preparation
1. Rinse the chicken well and cut into your preferred pieces. Place the pieces in a pot or large bowl.

2. In a blender, combine the garlic, ginger, onion, celery, parsley and white pepper. Blend into a coarse paste or a smooth mixture depending on your preference.

3. Pour the blended mixture over the chicken, rubbing the flavors into each piece. Add the seasoning cubes and salt, then stir to distribute the seasonings evenly.
4. Place the pot on the stove and bring the chicken and seasonings to a gentle boil. Let it simmer briefly—this helps the flavors penetrate and partially cooks the chicken so it fries evenly later.

5. In a separate deep pot or heavy skillet, heat enough vegetable oil for frying over medium-high heat. The oil should be hot but not smoking—about 350°F (175°C) if you use a thermometer.
6. Remove the chicken from the pot and let excess moisture drain for a moment. Carefully place the pieces into the hot oil in batches to avoid overcrowding. Fry until the chicken turns golden brown on all sides and reaches a safe internal temperature (165°F / 74°C for white meat). Turn the pieces as needed so they brown evenly.

7. Transfer the fried pieces to a paper towel-lined plate or wire rack to drain any excess oil. Let them rest a few minutes so juices redistribute and the crust firms up.
