
Cherry cobblers are a comforting favorite I make often. These Angostura Cherry Cobblers add a memorable twist: a jammy cherry filling brightened and deepened by Angostura bitters. Bitters are common in cocktails but less so in baking, and their aromatic spice profile transforms the cherries into a lush, layered filling that feels both familiar and new.
Bitters are concentrated alcoholic extracts used to flavor drinks and, increasingly, foods. Originating as medicinal tinctures, they became a staple of mixed drinks in the early 19th century and work like vanilla extract by using alcohol to pull flavor from botanicals. A bitters bottle typically contains a complex blend of spices, roots, herbs and other aromatics that deliver intense flavor in just a few dashes. While many bitters carry a bitter edge, they most often provide depth and complexity rather than overt bitterness.
Not every recipe needs bitters, but they can shine in the kitchen. For these cobblers I stir a generous eight dashes of Angostura bitters into the cherry filling. Angostura aromatic bitters have a recipe that dates back to the early 1800s and are known for warm notes like allspice, clove and cinnamon. Those spices pair beautifully with cherries, giving the filling spicy, rounded character without overpowering the fruit.
The topping is a simple buttermilk-vanilla biscuit that complements the spiced cherries without competing with them. Its straightforward biscuit texture and gentle sweetness let the filling remain the star. I baked these as individual cobblers in four 8-ounce ramekins so each serving is perfectly portioned. You can distribute the topping to fully cover the cherries or leave a bit of the fruit peeking through; either way there’s enough topping for all four ramekins. Serve the cobblers slightly warm—plain or crowned with a small scoop of vanilla ice cream—for best results.

Angostura Cherry Cobblers
Filling
16 oz cherries, fresh or frozen
1/4 cup sugar
8 dashes Angostura bitters
1 tbsp cornstarch
Topping
1 cup all-purpose flour
1/4 cup sugar
1 tsp baking soda
1/4 tsp salt
1/4 cup butter, melted and cooled
2/3 cup buttermilk
1 tsp vanilla extract
coarse sugar, for sprinkling
Preheat the oven to 375°F. Place four 8-ounce ramekins on a baking sheet.
In a medium bowl, combine the cherries, sugar, Angostura bitters and cornstarch; stir until evenly mixed.
In a large bowl, whisk together the flour, sugar, baking soda and salt. Add the melted butter, buttermilk and vanilla, stirring until a soft dough forms.
Divide the cherry mixture evenly among the prepared ramekins. Spoon or dollop the topping over the cherries—use your fingers if you like a more rustic finish. Sprinkle the tops with coarse sugar.
Bake 25–30 minutes, until the filling is bubbling and the topping is golden brown.
Let the cobblers cool briefly before serving.
