Spicy Refrigerator Pumpkin Pickles Recipe for Quick Preserving

It’s pumpkin season—try a break from sweet pies with this tangy, spicy pumpkin pickle. A simple overnight refrigerator pickle, it keeps up to two months in the fridge and adds a bright, savory note to many dishes.

Customize your pickle

This spicy pumpkin pickle is flexible—adjust aromatics and heat to taste.

Garlic: Omit if you dislike garlic, or increase from three cloves to seven for a robust garlicky bite.

Red chilis: Two give a nice kick—use one for milder heat or three for spicier pickles.

Lime juice: Four limes (about 1/2 cup) make a pronounced lime tang. For milder lime flavor, use two limes and add 2 tablespoons extra vinegar and 2 tablespoons water.

White wine vinegar: Chosen here for a lighter flavor; apple cider vinegar is an easy substitute.

Sugar: Three tablespoons balances the sour and savory. If you prefer sweeter pickles, try four tablespoons, but avoid going too sweet.

Ginger: Fresh ginger complements pumpkin and works well with Japanese or Chinese-inspired pairings. Omit it if you plan to serve the pickle with cheese or dislike ginger.

Refrigerator pickles?

Refrigerator pickles are quick and must be stored in the fridge. They last up to two months refrigerated. Properly canned pickles, by contrast, can be shelf-stable for years when unopened.

How to make spicy pumpkin pickle

Read the customization notes above before starting. Avoid changing the total liquid significantly; swapping or adding herbs and spices is fine.

Use about 12.5 oz (355 g) peeled pumpkin—vacuum-packed pumpkin chunks work well. Cut into roughly 1-inch columns and thinly slice (a mandoline gives uniform thin pieces). If you don’t have a mandoline, use the long hole on a box grater, slice thinly by hand, or use a ribbon peeler and chop ribbons into bite-size pieces.

Quarter a small onion and slice it thinly. Thinly slice two red chilis and three large garlic cloves. Peel and thinly slice about 1/2 inch of fresh ginger, then cut the slices lengthwise into thin batons if using.

Add all the vegetables to a medium pot with two teaspoons of black peppercorns.

Pour in 1/2 cup white wine vinegar, the juice of four limes (about 1/2 cup), 1 cup water, 1 teaspoon salt, and 3 tablespoons sugar. Bring to a boil over high heat, then reduce to a steady simmer and cook 4–5 minutes.

Check the pumpkin with a fork: it should be al dente—tender but not mushy. Cooking time will vary with slice thickness; test every minute until done. Avoid overcooking, or the slices will fall apart later.

Transfer the mixture to a glass container (a 16 oz preserves jar works well). Glass is preferred for longer storage in the fridge. Ensure the liquid nearly covers the vegetables; add a few tablespoons of water if needed.

Let the jar cool to room temperature (about three hours), then refrigerate overnight. The pickle is ready the next day and will keep in the fridge for around two months.

Ingredients

Instructions
