Catfish Atchafalaya combines Southern fried catfish smothered in creamy crawfish étouffée and served over green onion rice. It’s an elegant, comforting meal you can easily make at home.

Inspired by a popular Louisiana restaurant, this dish pairs crisp, cornmeal-breaded catfish with a rich, savory crawfish étouffée and fragrant green onion rice. Leftovers of étouffée and rice are perfect for assembling this dish quickly: fry the fish, warm the étouffée, and spoon it over the fillets for a restaurant-quality plate.

🥘 Ingredients Needed

Southern Fried Catfish

  • Catfish fillets (fresh is best—fish should smell clean, not off)

Wet Ingredients

  • Eggs
  • Buttermilk (regular milk or water can be substituted)
  • Hot sauce (Tabasco or your favorite)

Dry Ingredients

  • Cornmeal
  • Whole wheat flour (or all-purpose flour)

  • Creole seasoning (Tony Chachere’s or homemade)
  • Flour (all-purpose; arrowroot or tapioca for gluten-free)
  • Chicken or seafood stock
  • Tomatoes (diced fresh or canned; Creole-style)
  • Kosher salt
  • Dried thyme
  • Dried parsley
  • Worcestershire sauce
  • Heavy cream
  • Louisiana crawfish tails (or leftover crawfish from a boil)

For Serving

  • Hot cooked rice (green onion rice or plain white rice)
  • Sliced green onions or fresh parsley
  • Toasted French bread

Green Onion Rice

  • Salted butter
  • Diced onion
  • Diced celery
  • Chopped green onions
  • Fresh parsley
  • Kosher salt
  • Black pepper
  • Water
  • Long-grain white rice (rinsed)

🥣 How to Make It

Start by making the crawfish étouffée so it has time to develop flavor. While the étouffée simmers, dredge the catfish in the wet and dry mixtures and refrigerate the fillets briefly so the coating sets. Heat your frying oil while you prepare the green onion rice—an Instant Pot or stovetop pot works well.

Fry the catfish until golden and crisp. The rice should finish around the same time as the fish. Plate a scoop of green onion rice, top with a fried catfish fillet, then spoon a generous ladle of crawfish étouffée over the fish. Garnish with sliced green onions or fresh parsley and serve with toasted French bread for soaking up the sauce.

Storage & Shelf Life

Each component stores differently:

Catfish: Cool completely, then refrigerate in an airtight container for a few days. Reheat in an air fryer, toaster oven, or regular oven to restore crispness. For longer storage, freeze in an airtight container or vacuum-seal to prevent freezer burn.

Green onion rice: Keep refrigerated for a few days. Reheat covered with a damp towel in the microwave on low to restore moisture, stirring and repeating as needed.

Crawfish étouffée: Store in an airtight container in the refrigerator for 2–3 days. Reheat gently over low heat to avoid toughening the crawfish. Étouffée freezes well for several months; thaw in the refrigerator and reheat slowly on the stove.
