
September is here, and though I’m not quite ready for autumn, I’m enjoying the cooler evenings. After I finish the day’s chores and tidy the kitchen, I love to unwind with a cup of lavender or chamomile tea and a freshly baked cookie.
I favor spice cookies over chocolate, and my go-to is a simple ginger cookie. This version uses both fresh and dried ginger, and the scent that fills the kitchen while they bake is irresistible.
The cookies remain pleasantly soft while staying sturdy enough for a cookie jar. I often make a double batch and freeze half, because they vanish quickly. Whether you enjoy them with a morning cappuccino, a glass of cold milk, or a quiet cup of tea in the evening, these double ginger cookies are a family favorite.

Double Ginger Cookies
Makes 32 Cookies

Ingredients
- 3/4 Cup Unsalted Butter, Softened
- 1 Cup Brown Sugar
- 1/4 Cup Honey (I used Chestnut Honey)
- 1 Large Egg
- 1 Tablespoon Grated Fresh Ginger
- 2 1/2 Cups All-purpose Flour plus 2 Tablespoons
- 1 Teaspoon Baking Soda
- 1 1/2 Teaspoons Ground Ginger
- Demerara Sugar for rolling
Instructions
- Preheat the oven to 350°F (175°C) and line two large baking sheets with parchment paper.
- In a large bowl, beat the butter, brown sugar, and honey with an electric mixer until light and fluffy, about 3 to 4 minutes.
- Beat in the egg and the grated fresh ginger until well combined.
- Sift the dry ingredients (flour, baking soda, ground ginger) over the butter mixture and stir with a wooden spoon until just combined.
- Using heaping tablespoons, scoop the dough and roll into balls.
- Roll each ball in the Demerara sugar, then place on the prepared baking sheet.
- Press each ball down gently to flatten slightly, leaving about 2 inches between cookies for spreading.
- Bake for 12 to 14 minutes, or until the edges are lightly browned.
- Cool the cookies on wire racks. Store once cooled in an airtight container.
