These oat flour chocolate chip cookies are crisp at the edges with a tender, chewy center and pockets of melty chocolate in every bite. You’d never guess they’re gluten-free—the oat flour gives a subtle, nutty flavor while keeping the texture familiar and satisfying.

If you want a gluten-free cookie that tastes like a classic chocolate chip cookie, try this oat flour version. These cookies are soft, chewy and slightly gooey inside with a light, crisp exterior. The oat flour flavor is mild and adds an extra layer of nuttiness without overpowering the cookie.
The recipe uses simple pantry ingredients and requires only a short chill time. Oat flour is also a more nutrient-dense choice than refined wheat flour, offering a bit more fiber and protein while delivering excellent texture in these cookies.

Ingredients You Need
- Unsalted butter. Either unsalted or salted butter works; use room temperature butter for easy creaming.
- Brown sugar. Adds moisture and a deeper, caramel-like flavor.
- Granulated sugar. Helps the cookies spread slightly and creates a delicate crisp edge.
- Egg. Binds the dough and contributes to chewiness and structure.
- Vanilla extract. Enhances overall flavor.
- Oat flour. Provides structure without gluten and gives a subtle nutty note.
- Baking soda. For lift and chewiness.
- Salt. Balances sweetness.
- Chocolate chips. Use chips or chunks—dark, milk, or white chocolate all work.
- Sea salt flakes. Optional—sprinkling a little on top intensifies flavor and adds contrast.

Can You Use Homemade Oat Flour?
Yes. To make oat flour at home, pulse rolled oats in a food processor or high-speed blender until they become a fine powder. Homemade oat flour is quick and convenient, though it can be slightly coarser than commercial versions. If you prefer an ultra-fine texture, commercial oat flour will be a bit smoother, but homemade oat flour works well for this recipe.
Don’t Skip Chilling the Dough
Chilling the dough is important. Resting the dough in the fridge firms the fat and prevents excessive spreading during baking. It also allows the oat flour to hydrate, improving texture and reducing grittiness. Chill for at least 30 minutes; you can refrigerate up to three days for convenience.

Make in Advance
The dough stores well. Keep it in the refrigerator for up to 3 days. For longer storage, portion the dough into balls, freeze on a parchment-lined sheet for 1–2 hours, then transfer to an airtight container or zip-top bag. Frozen dough will keep up to 3 months. Bake straight from frozen, adding 1–2 minutes to the baking time if needed.

- 1/4 cup (50 gr) granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 3/4 cups (210 gr) oat flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup (130 gr) chocolate chips
- Sea salt flakes, optional
Instructions
-
Using a hand mixer or stand mixer fitted with the paddle attachment, cream the butter with the brown and granulated sugars on high speed until pale and fluffy.
-
Scrape down the bowl. Add the egg and vanilla, then beat until combined.
-
Add the oat flour, baking soda, and salt. Mix on low speed just until incorporated—do not overmix.
-
Fold in most of the chocolate chips with a spatula, reserving a few to press on top before baking.
-
Chill the dough for at least 30 minutes or up to 3 days in the fridge. This step helps control spread and improves texture.
-
Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.
-
Using a 1.6 inch (about 4 cm) scoop or a tablespoon, drop rounded portions of dough onto the prepared sheets, spacing them about 2 inches apart.
-
Press a few reserved chocolate chips into the top of each cookie for an attractive finish.
-
Bake for 9–11 minutes, until the edges are set and the centers still look slightly soft.
-
Right after removing the cookies from the oven, sprinkle with sea salt flakes if using.
-
Let the cookies rest on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
