Pesto Rice and Beans: Flavorful One-Pot Meal Recipe

I’ve been using my crock pot to make flavorful side dishes, and this Pesto Rice & Beans has become a favorite. It pairs beautifully with simple grilled or marinated chicken breasts and is an easy, satisfying accompaniment that comes together with minimal effort.

Ingredients

  • 1 can 15 oz Great Northern beans, rinsed and drained
  • 1 can 14 oz vegetable or chicken broth
  • 3/4 cups uncooked long grain rice
  • 1 1/2 cup frozen cut green beans, thawed and drained
  • 1/2 cup prepared pesto
  • Grated Parmesan cheese optional

Instructions

  • Combine the rinsed beans, broth, and uncooked rice in the crock pot. Cover and cook on low for 2 hours.
  • Stir in the thawed, drained green beans. Recover and cook on low for another hour, or until the rice and beans are tender.
  • Turn off the slow cooker. Stir in the prepared pesto and grated Parmesan, if using. Let the dish sit covered for 5 minutes, until the cheese melts and flavors meld. Serve hot.
