We tend to snack more in summer — maybe because we’re home more, maybe because the kids are always hungry. I originally planned a plain, dry trail mix, but a sweet tooth took over and I decided to coat the cereal in a candy-like glaze so the pieces stick together. To give the mix a summery, tropical vibe, I added dried pineapple instead of the usual raisins. Diced pineapple rounds add bursts of sweetness and a pleasant chew, and combined with shredded coconut they create a tropical flavor profile that complements the crunchy cereal and seeds.

The base is cereal to keep the snack nut-free while still delivering crunch. I used plain rice Chex from the pantry, which is economical compared to buying mixed nuts. This version is budget-friendly and ideal for households avoiding tree nuts and peanuts.

I should warn you: this recipe yields a lot. That’s great for gatherings — I made it over the Fourth of July and family helped finish it — but next time I’ll probably halve the batch for just our family of five to avoid temptation.

How to adapt this trail mix to be more allergy-friendly:

  • You can swap the cereal. Corn Chex or another crispy, nut-free cereal works fine — keep the same total volume.
  • If you need gluten-free, omit the Frosted Flakes (they contain malt from barley) and use 9 cups of rice Chex instead.
  • If dried pineapple is hard to find, substitute another dried fruit you like.
  • If someone is allergic to sunflower seeds, pumpkin seeds are a suitable swap.
  • If you don’t have chia or hemp seeds, omit them and add an extra 1/2 cup of rice Chex to maintain volume.

Ingredients

  • 1/2 cup chopped, dried pineapple
  • 2 cups sweetened, shredded coconut*
  • 6 cups rice Chex
  • 1 cup salted sunflower seeds
  • 1/4 cup chia seeds
  • 1/4 cup hemp seeds
  • 3 cups Frosted Flakes*
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 3/4 cup coconut oil

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, combine the dried pineapple, shredded coconut, rice Chex, sunflower seeds, chia seeds, hemp seeds, and Frosted Flakes. Set aside.
  3. In a medium saucepan over medium heat, stir together the corn syrup, granulated sugar, and coconut oil. Bring to a boil and cook for about two minutes (soft-ball stage).
  4. Pour the hot sugar mixture over the cereal and seed mixture, then stir quickly and thoroughly to coat everything evenly.
  5. Spread the coated mixture onto the prepared baking sheet to cool.
  6. Once cool enough to handle, break into clusters or crumble as desired.
  7. Store in an airtight container or bag.

Notes

*You can use unsweetened shredded coconut if you prefer.
*Frosted Flakes are wheat-free but not gluten-free due to malt from barley; for a gluten-free version omit the Frosted Flakes and use 9 cups rice Chex instead.
