Instructions
- Make dressing: In a small bowl, whisk together pesto, parmesan, Greek yogurt, mayonnaise, lemon juice, garlic, salt, and honey until smooth. Add water a teaspoon at a time if you prefer a thinner dressing. Taste and adjust seasoning.
- Assemble salad: In a large bowl, combine cooked and cooled pasta, chicken, chickpeas, cherry tomatoes, artichoke hearts, bocconcini, and arugula. Pour the dressing over top and toss until everything is evenly coated.
- Store: Refrigerate the salad in a covered container for up to four days. Toss before serving if dressing has settled. Serve cold.
