Who’s ready for fajitas? Or at least a big jar of fajita seasoning ready to use whenever the craving hits.

The seasoning is the soul of great fajitas. It brings the smoky, savory, and slightly spicy notes that make sizzling peppers, onions, and your choice of protein irresistible. Without it, you’d just have plain meat and veg.

Fajitas are one of my favorite Mexican-inspired meals: hot, vibrant vegetables and seasoned protein wrapped in a warm tortilla with your favorite toppings. They’re simple, satisfying, and endlessly adaptable.

I love making sheet pan chicken fajitas because they’re effortless and feed a crowd with minimal cleanup. My husband even volunteers to cook them sometimes—so you know they’re a winner. Making the seasoning in bulk means it’s always on hand to speed weeknight dinners.

This bulk homemade fajita seasoning was my husband Paul’s request. He didn’t enjoy measuring and mixing the spices every time, so we made a larger batch to store and use whenever we want. It’s convenient and delicious—perfect timing for Cinco de Mayo or any fajita night.

Ingredients for homemade fajita seasoning:

The recipe card below lists exact measurements, but here’s an overview of the ingredients and why they matter.

  • Chili powder – the base of the blend. Use a good-quality chili powder for the best flavor.
  • Smoked paprika – adds sweet smokiness. Be sure to use smoked paprika rather than regular paprika for depth.
  • Onion powder – for savory onion flavor without the texture of fresh onion.
  • Garlic powder – provides warm, garlicky notes.
  • Cumin – contributes earthy, toasty warmth common in Mexican flavors.
  • Dried oregano – a subtle herbal accent that complements the other spices.
  • Cayenne pepper – optional, for heat. Adjust to taste.
  • Red pepper flakes – optional, also for heat and texture. Both heat ingredients are mild in this mix and can be omitted or adjusted.
  • Kosher salt – seasons the blend; if using finer table salt, reduce the amount accordingly.

That’s it. Simple pantry spices combine to make a robust seasoning that speeds dinner prep and elevates every fajita variation.

This bulk mix is ideal if you buy spices in larger quantities or want a jar on hand so you don’t have to measure for each meal. One batch makes multiple portions for several fajita dinners.

How long will the homemade fajita seasoning last?

Stored in an airtight container in the pantry: up to 6 months.

Stored in the freezer: at least 1 year.

Spices don’t spoil quickly, but they lose potency over time. Freezing helps preserve aroma and flavor if you plan to keep the mix long-term. We use ours regularly, so pantry storage works fine for us.

How to use the homemade fajita seasoning mix

This blend works with any fajita or taco-style dish: chicken, shrimp, steak, seafood, tofu, or vegetable fajitas. I especially like it for sheet pan chicken and sheet pan shrimp fajitas.

For a fajita recipe serving 4–6, use about 3 to 4 tablespoons of the seasoning mix. Adjust the amount up or down for larger or smaller batches, and consider labeling your jar with the recommended portion per recipe.

If cooking in a skillet: Add the seasoning 1–2 minutes before finishing cooking so the spices toast and bloom.

If making sheet pan fajitas: Toss the vegetables and protein with the seasoning and a little oil (avocado oil or another high-heat oil) on the sheet pan, then roast.

Homemade seasoning offers better flavor and control over ingredients and salt level, and it’s often cheaper than buying single-use packets. You can tweak spice levels to suit your preferences.

Storage and tips

Store the seasoning in an airtight jar or container. Label it with the date and the suggested portion (3–4 tablespoons per 4–6 serving fajita recipe) so you don’t have to guess later. If you use table salt instead of kosher salt, reduce the salt amount because table salt is finer and saltier by volume.
