Dark Chocolate Almond Butter No-Bake Cookies with Sea Salt

Meet your new favorite no-bake dessert: easy cookies made with dark chocolate, toasted almonds, and dried cranberries — with a secretly healthy twist.

No-Bake Cookies with Dark Chocolate, Almond Butter and Sea Salt

Last week my son Owen turned five. Ever since I can remember I’ve loved the idea of bringing treats to celebrate at school — frosting cupcakes late into the night with my mom, loading them into cardboard boxes and hoping they survived the ride. Those moments felt special, and I loved helping hand out snacks to classmates.

Times change. Owen’s elementary school has a strict no-food policy for birthdays because of allergies, so parents are invited to come in and read instead. I read his class a story, which was sweet and fun — but I missed the cupcakes.

I won’t lie: I was a little bummed. Yet these No-Bake Cookies with Dark Chocolate, Almond Butter and Sea Salt are exactly the kind of quick, kid-friendly treat I would have loved to bring. Since I couldn’t share at school, Alex and I ended up eating most of them ourselves — not that we minded.

These no-bake cookies come together with just six pantry-friendly ingredients, many of which you likely already have:

  • Dark chocolate chips
  • Almond butter
  • Toasted slivered almonds
  • High-fiber bran cereal
  • Dried cranberries
  • Flaky sea salt

The healthy secret? High-fiber bran cereal. I used Nature’s Path Organic Smart Bran, but other bran cereals like Fiber One work well too. The cereal adds crisp texture and fiber without changing the chocolaty flavor.

If you’re skeptical, give them a try: the cookies are crispy and crunchy, deeply chocolatey, chewy from the cranberries, and finished with a pinch of flaky salt. They hit sweet, salty, and crunchy notes in every bite.

Best of all, these are truly no-bake and take about 10 minutes to make. They set in the fridge and keep well for up to two weeks in an airtight container, making them a great make-ahead dessert for parties or lunchboxes.

I’ll be making another batch soon and might add holiday sprinkles for the kids — or just enjoy them plain. Either way, these cookies are fast, satisfying, and easy to adapt.
